Cowboy Cornbread

Ingredients

  • 1 lb. ground chuck
  • 1/2 medium onion
  • 1 pkg. taco seasoning
  • 3/4 c. water
  • 4.5 oz. can green chilies
  • 4.5 oz. can black olives
  • 2 boxes Jiffy cornbread mix
  • 1/3 c. milk
  • 3 eggs
  • 1 can cream-style corn
  • 2 c. sharp Cheddar cheese

Directions

    Brown ground chuck with onion. Drain fat.

    Add taco seasoning and water (as if to make tacos). Then add green chilies and black olives.

    Set aside.

    Mix cornbread mix, milk, eggs and corn.

    In 13 x 9 greased or sprayed pan, layer 1/2 cornbread mix and all meat; top with cheese.

    Spoon on rest of cornbread mix. Spread evenly.

    Bake at 350° for 35 minutes or until brown.
