Ingredients

  • 6 slices bacon
  • 1 c. sliced onion (1 large)
  • 1/2 c. chopped green pepper
  • 1 clove garlic, crushed
  • 1 1/2 lb. ground chuck or round
  • 1 (1 lb. 13 oz.) tomatoes
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. chili powder
  • 1 (12 oz.) can whole kernel corn, drained
  • 1 can (about 1 lb.) red kidney beans, drained
  • 2 c. cubed, pared potatoes

Directions

    Cook bacon until crisp; drain on paper towels.

    Crumble; reserve.

    Saute onion, green pepper and garlic in bacon drippings until tender.

    Add ground beef; cook until well browned, breaking up with fork as it cooks.

    Add tomatoes, salt, pepper and chili powder.

    Cover; simmer 30 minutes.

    Add vegetables; simmer 15 minutes.

    Sprinkle with bacon.
