  • 1 can black beans, rinsed and drained
  • 1 can chopped ripe olives, drained
  • 1 small onion, chopped
  • 14 oz. diced green chiles
  • 1 clove garlic, chopped
  • 4 Tbsp. cilantro, chopped
  • 2 Tbsp. vegetable oil
  • 1 green onion, sliced
  • 2 Tbsp. lime juice
  • 2 tsp. chili powder
  • 1/4 tsp. salt
  • 1/4 tsp. crushed red pepper
  • 1/4 tsp. cumin
  • 1 tsp. pepper
  • 1 pkg. cream cheese, softened
  • 2 hard-boiled eggs, peeled and chopped
  • salsa

Directions

    Mix all ingredients except cream cheese, eggs, green onions and salsa.

    Cover and refrigerate 2 hours.

    Spread cream cheese on round serving plate.

    Spoon bean mixture evenly over cream cheese. Arrange eggs on bean mixture around edges along with salsa. Sprinkle with green onions.

    Serve with tortilla chips.
