  • 1 pound crab meat backfin
  • 1 teaspoon worcestershire sauce
  • 2 teaspoons mayonnaise
  • 1 each eggs beaten
  • 1/4 cup cracker crumbs
  • 1 x garlic minced, to taste
  • 1 pinch cayenne pepper

Directions

    Combine all ingredients and form into small cakes.

    Saute in butter.

    Serve hot with tarragon sauce (see separate recipe).
