  • 1 lb. fresh crab meat (remove all shells)
  • 1 egg
  • 1 Tbsp. dry mustard
  • 1/2 c. fresh parsley, finely chopped
  • dash of red pepper
  • 6 hard-cooked eggs, mashed with fork
  • 1/2 tsp. cornstarch
  • 1/8 c. milk

Directions

    Combine first 5 ingredients, then add mashed, hard-cooked eggs.

    Heat milk and cornstarch.

    Add to crab mixture and form into balls.

    Roll in cracker crumbs; dip into egg-milk mixture, then into cracker crumbs again.

    Fry in deep fat.
