- 1 lb. fresh crab meat (remove all shells)
- 1 egg
- 1 Tbsp. dry mustard
- 1/2 c. fresh parsley, finely chopped
- dash of red pepper
- 6 hard-cooked eggs, mashed with fork
- 1/2 tsp. cornstarch
- 1/8 c. milk
Directions

1Combine first 5 ingredients, then add mashed, hard-cooked eggs.

2Heat milk and cornstarch.

3Add to crab mixture and form into balls.

4Roll in cracker crumbs; dip into egg-milk mixture, then into cracker crumbs again.

5Fry in deep fat.
