- 2 eggs
- 2 Tbsp. mayonnaise
- 1 Tbsp. prepared mustard
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 Tbsp. snipped parsley
- crushed saltine crackers
Directions

1Crush saltines in Ziploc bag with rolling pin.

2Line baking sheet with waxed paper, foil or Saran Wrap.

3Sprinkle fine layer of crumbs.

4Very lightly, combine all ingredients including unbeaten eggs.

5Using serving spoon, put good sized dollops of mixture on top of crumbs.

6Crush additional crumbs if needed to add a top layer.

7Let set up under refrigeration until ready to serve.

8Saute in butter or margarine, turning once.
