- 1 lb. crab meat
- 1 Tbsp. minced onion
- 1 Tbsp. butter, melted
- 1 egg, beaten
- 1/2 tsp. dry mustard
- 1/2 tsp. salt
- 1 dash pepper
- 1 dash cayenne pepper
- 1/2 c. dry bread crumbs
Directions

1Pick over crab meat for pieces of shell.

2Cook onion in butter until tender.

3Combine all ingredients, except bread crumbs. Shape into 6 cakes and roll in bread crumbs.

4Place cakes in frypan with 1/8-inch of fat that is hot, but not smoking.

5Fry at moderate heat.

6When all the cakes are brown on one side, turn and brown other side.

7The cooking time will be approximately 5 to 8 minutes.
