Ingredients

  • 8 oz. crabmeat, minced (frozen or canned may be used)
  • 12 unsalted saltines, made into fine crumbs
  • 1 egg
  • 2 Tbsp. each minced onion, minced red bell pepper, finely chopped fresh parsley
  • 1 Tbsp. light mayonnaise
  • 1 Tbsp. lemon juice
  • 1/4 tsp. powdered mustard
  • dash of red pepper
  • dash of white pepper
  • 1 1/4 tsp. vegetable oil

Directions

    Combine all ingredients except oil.

    Divide into 4 portions forming each into a patty.

    Cover and refrigerate at least 30 minutes.

    Heat oil over high heat, reduce heat to medium and add patties.

    Cook, turning once, until browned, about 3 minutes on each side.

    Serve on warmed platter with a seafood sauce.

    Yield: 2 servings of 2 patties each.
