- 8 oz. crabmeat, minced (frozen or canned may be used)
- 12 unsalted saltines, made into fine crumbs
- 1 egg
- 2 Tbsp. each minced onion, minced red bell pepper, finely chopped fresh parsley
- 1 Tbsp. light mayonnaise
- 1 Tbsp. lemon juice
- 1/4 tsp. powdered mustard
- dash of red pepper
- dash of white pepper
- 1 1/4 tsp. vegetable oil
Directions

1Combine all ingredients except oil.

2Divide into 4 portions forming each into a patty.

3Cover and refrigerate at least 30 minutes.

4Heat oil over high heat, reduce heat to medium and add patties.

5Cook, turning once, until browned, about 3 minutes on each side.

6Serve on warmed platter with a seafood sauce.

7Yield: 2 servings of 2 patties each.
