- 1 lb. crab meat (about 3 c.)
- 2 eggs, lightly beaten
- 1 green pepper, chopped
- 1 tsp. dry mustard
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/3 c. cracker crumbs
- 3 Tbsp. mayonnaise
- additional cracker crumbs
- butter for cooking
Directions

1Combine eggs with the green pepper, mustard, salt, pepper, cracker crumbs and mayonnaise.

2Fold in crabmeat; shape into cakes.

3Coat with additional crumbs; refrigerate for 1 hour, or until ready to cook.

4Saute in butter over medium heat for about 3 minutes per side, or until delicately browned.
