- 2 c. cooked crab meat
- 3 Tbsp. butter
- 5 Tbsp. flour
- 1 1/2 c. milk
- salt and pepper
- 1 egg, beaten
- dash of celery salt
- 1 tsp. grated onion
- mayonnaise
- dry bread crumbs
Directions

1Melt butter; blend in flour and add milk.

2Cook, stirring constantly, until thick.

3Add salt, pepper, beaten egg, celery salt and onion and cook until thick.

4Remove spines from crab meat and add to first mixture.

5Chill for several hours.

6Form into cakes or cut into small steak-shaped pieces; dip into flour, then spread generously on both sides with mayonnaise and roll in crumbs.

7Brown in hot butter.

8Serve with creamed peas, cheese sauce and lemon wedges.
