Ingredients

  • 1 stick unsalted butter
  • 1 bell pepper
  • 2 cloves garlic, chopped
  • 1/2 cup chopped shallots
  • 1/4 cup chopped parsley
  • 1 lb. white crabmeat
  • 5 cups eggplant, cubed and boiled until tender
  • breadcrumbs to coat eggplant
  • 2 eggs
  • 8 ozs. lite sour cream
  • Tony's or Creole seasoning to taste
  • buttered breadcrumbs

Directions

    Saute seasonings in butter.

    Add crabmeat.

    Coat eggplant with breadcrumbs and toss with crab mixture.

    Beat eggs, add sour cream.

    Add to crab mixture.

    Season and pour into casserole.

    Top with buttered breadcrumbs.

    Bake at 350 degrees about 45 minutes.
