- 1 stick unsalted butter
- 1 bell pepper
- 2 cloves garlic, chopped
- 1/2 cup chopped shallots
- 1/4 cup chopped parsley
- 1 lb. white crabmeat
- 5 cups eggplant, cubed and boiled until tender
- breadcrumbs to coat eggplant
- 2 eggs
- 8 ozs. lite sour cream
- Tony's or Creole seasoning to taste
- buttered breadcrumbs
Directions

1Saute seasonings in butter.

2Add crabmeat.

3Coat eggplant with breadcrumbs and toss with crab mixture.

4Beat eggs, add sour cream.

5Add to crab mixture.

6Season and pour into casserole.

7Top with buttered breadcrumbs.

8Bake at 350 degrees about 45 minutes.
