Ingredients
- 3 eggs
- 3/4 c. sour cream
- 1/2 c. milk
- 1/2 tsp. salt
- 1/4 tsp. dry mustard
- dash of cayenne pepper
- 5 oz. crabmeat
- 1 c. Swiss cheese, grated
- 2 Tbsp. chives
- 1 Tbsp. lemon juice
- 1 unbaked pastry quiche-lined dish
Directions

1In mixing bowl, beat eggs until frothy.

2Add sour cream, milk, salt, mustard, cayenne and blend well. Drain crabmeat, break up and remove all cartilage.

3Add to egg mixture.

4Add cheese, chives and lemon juice and mix well.

5Pour mixture into unbaked pie shell and bake at 425°

6for 15 minutes.

7Turn heat down to 350°
-
8and bake another 30 to 40 minutes until a knife inserted near the center comes out clean.

9Serves 6.
