Ingredients

  • 1/4 c. oil (olive or canola)
  • 1/3 to 1/2 c. onion, finely chopped
  • 2 cloves garlic, chopped
  • 1/3 to 1/2 c. celery, finely chopped
  • 5 to 6 hot peppers (i.e., jalapenos)
  • 1 c. cooked crab (1 1/2 to 2 cans)
  • 1/2 c. fresh cilantro, chopped
  • salt to taste

Directions

    Saute onion, garlic and celery; add peppers and crabmeat. Cook, stir-fry style, until mixture begins to brown.

    Add cilantro and salt; cook a bit more until well mixed.

    Serve with tortillas or crackers.
