- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 1/2 c milk
- 1/3 c. sherry
- 1/2 tsp. salt
- 1 c. shredded Swiss cheese
- 2 lb. sole fillets
- salt and pepper
- 1 medium onion, minced
- 2 Tbsp. butter
- 1 can (6 1/2 oz.) crab meat
- 5 fresh mushrooms, cleaned and chopped
- 1/2 c. cracker crumbs
- parsley flakes
Directions

1In a 4-cup glass measure, heat butter 30 seconds.

2Stir in flour, milk, sherry and salt, blending well.

3Cook 2 to 3 minutes, stirring every minute until thickened.

4Stir in cheese and set aside.

5Cut fish in serving pieces and sprinkle with salt and pepper.
