  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 1/2 c milk
  • 1/3 c. sherry
  • 1/2 tsp. salt
  • 1 c. shredded Swiss cheese
  • 2 lb. sole fillets
  • salt and pepper
  • 1 medium onion, minced
  • 2 Tbsp. butter
  • 1 can (6 1/2 oz.) crab meat
  • 5 fresh mushrooms, cleaned and chopped
  • 1/2 c. cracker crumbs
  • parsley flakes

Directions

    In a 4-cup glass measure, heat butter 30 seconds.

    Stir in flour, milk, sherry and salt, blending well.

    Cook 2 to 3 minutes, stirring every minute until thickened.

    Stir in cheese and set aside.

    Cut fish in serving pieces and sprinkle with salt and pepper.
