Crab Stuffed Sole

Ingredients

  • 2 green onions (with tops), chopped
  • 1/2 green pepper, chopped
  • 1/2 c. fresh mushrooms, sliced
  • 2 Tbsp. dry white wine
  • 1/4 lb. crab meat
  • 1 lb. fresh sole fillets
  • 1 1/2 Tbsp. fresh lemon juice
  • 1/2 c. chicken broth
  • 1/4 c. flour

    Saute green onions, green pepper and mushrooms in wine. Drain.

    Add crab.

    Lay sole flat. Spread crab filling over each fillet. Roll and secure with toothpicks.

    Pour lemon juice and 1/4 of the chicken broth over fish.

    Bake at 350° for 10 to 12 minutes or until fish flakes easily when tested with a fork. Transfer to a serving plate to keep warm.
