Crab Stuffed Tomatoes

- 1 medium onion
- 2 oz. celery
- 2 rashers bacon
- 3 oz. butter or margarine
- 2 oz. fresh white bread crumbs
- 4 oz. crab meat
- 2 eggs
- 6 large tomatoes
- grated cheese
- salt and pepper
- 6 small rounds of buttered toast
Directions

1Chop onion, celery and bacon finely and fry in butter with the bread crumbs until the onion is tender.

2Flake crab meat.

3Add crab to the onion mixture and stir in lightly beaten eggs.

4Season to taste.

5Cut the tops off the tomatoes and scoop out seeds.

6Stuff with the crab mixture, sprinkle with grated cheese and bake at 350° for 20 minutes.

7Serve on hot toast.
