- 2 lb. backfin crabmeat
- 2/3 c. dry fine bread crumbs
- 2/3 c. mayonnaise
- 1 egg, well beaten
- 2 Tbsp. horseradish
- 1 small onion, minced
- 1 small green pepper, minced
- 1 small stalk celery, minced
- 1 tsp. salt
- 4 c. corn oil
- generous sprinkling freshly ground black pepper
Directions

1Mix all ingredients, except oil, in a bowl.

2Toss mixture lightly, but well to blend thoroughly.

3Heat corn oil in a large heavy skillet or Dutch oven.

4(A piece of bread dropped into the oil will turn golden brown when the temperature of the oil is just right.)

5Form crabmeat in 12 patties, approximately 1/2-inch thick.

6Fry crab patties until golden brown, 6 to 8 minutes. Remove crab patties from skillet with tongs and dry on absorbent paper.

7Serve immediately.
