  • 1 c. flour
  • 1 tsp. salt
  • 1 Tbsp. baking powder
  • 2 Tbsp. sugar
  • 3/4 c. yellow cornmeal
  • 2 eggs, beaten
  • 3/4 c. cream-style corn
  • 1/4 c. milk
  • 1/2 c. cracklings
  • 1/2 c. melted shortening

Directions

    Sift flour, salt, baking powder and sugar into cornmeal in large bowl; mix well. Mix eggs, corn, milk, cracklings and shortening in bowl. Add to flour mixture, stirring just until moistened. Pour into 8 x 8-inch baking pan. Bake at 350° for 20 to 25 minutes or until corn bread tests done.
