  • 1/2 c. cracklings
  • 3 c. cornmeal
  • 1 tsp. salt
  • 2 c. buttermilk
  • 1 1/4 tsp. soda
  • 1/3 or 1/2 c. water (enough to make soft batter)

Directions

    Sift dry ingredients, then add the milk and cracklings.

    Shape into small, long rolls and place on a baking sheet or pour batter into a 9 x 9-inch square pan.

    Bake rolls 20 minutes in a 425° oven or bake in square pan in a 450° oven for 25 to 30 minutes.
