  • 3 Tbsp. oil
  • 1 1/2 c. corn meal
  • 1 1/2 tsp. baking soda
  • 2 Tbsp. sugar
  • 3/4 c. milk
  • 1 or 2 c. cracklings
  • 1/2 c. flour
  • 1/2 tsp. salt
  • 1 egg

Directions

    Heat oil in iron skillet until hot.

    Mix all remaining ingredients together; pour into hot skillet.

    With spoon, dip oil from sides of skillet to center of corn bread, making little puddles all over top.

    Bake at 375° to 400° until golden brown and crusty.
