- 1/2 c. all-purpose flour
- 1/2 tsp. soda
- 1/2 tsp. salt
- 1 c. buttermilk
- 2 eggs, beaten
- 2 Tbsp. vegetable oil
- 2 c. shredded Cheddar cheese
- 1 (8 oz.) can cream-style corn
- 1 small chopped onion
- 2 c. cracklings
- 2 Tbsp. pimento, chopped
Directions

1Combine first 4 ingredients; mix well.

2Add milk, eggs and vegetable oil; stir well.

3Stir in remaining ingredients; mix well.

4Pour batter into a greased 10-inch cast-iron skillet.

5Bake at 350° for 30 to 35 minutes or until lightly browned.
