Cramer'S Catfish Chowder

Ingredients
- 2 large onions
- 3 large potatoes
- 6 slices smoked country bacon
- 1 can cream of celery
- 4 lb. catfish or with 1 lb. mud fish
- 1 tsp. salt
- 1/2 tsp. pepper
- 3 c. milk
Directions

1Fillet catfish.

2Put meat into large pot.

3Add three cups of water, salt and pepper.

4Bring to boil.

5Let simmer for 15 to 20 minutes.

6Cut potatoes into small chunks, then boil until soft. Drain water from potatoes.

7Add catfish.

8Cook bacon in thick skillet.

9When fat is out of bacon, dispose of bacon.

10Cut onions into small chunks and cook with bacon fat until brown.

11Strain fat from onions and add onions to catfish.

12Add cream of celery and 3 cups of milk to catfish.

13Let simmer for 30 minutes, often stirring until catfish is down to small chunks.

14Feeds up to 6 people.
