  • 1/2 pounds, 2-5/8 ounces, weight Fresh Or Frozen Cranberries
  • 5 Tablespoons Superfine Sugar
  • 6 tablespoons, 2 teaspoons, 4-5/8 pinches Water
  • 2 bottles (750ml Size) Champagne Or Prosecco

    1. To make the puree, put the cranberries, sugar and water in a sauce pan and cook over a low heat for 15-20 minutes until the cranberries begin to break down.

    2. Let the mixture cool and used a food processor to make a puree. Pass it through a sieve to get rid of any seeds.

    3. Put a teaspoon of the cranberry puree into the bottom of a champagne flute or wine glass and top up with fizzy wine of some description (prosecco or your choice). Stir gently to mix.
