- 2 c. flour
- 1 c. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1 c. raw cranberries
- juice and grated rind of 1 orange
- 2 tsp. shortening
- boiling water
- 1 egg, well beaten
- 1 c. chopped nuts
Directions

1Sift together dry ingredients.

2Combine juice and orange rind, shortening and enough boiling water to make a total of 3/4 cup. Add egg.

3Blend liquid into dry ingredients, stir only until flour mixture is dampened.

4Add nuts and cranberries.

5Pour into greased and floured 9 x 5 x 3-inch pan.

6Push batter up into corners of pan, leaving the center slightly hollowed.

7For well rounded loaf, allow batter to stand in pan for 20 minutes before baking.

8Bake at 350° for 60 to 70 minutes.

9Cool thoroughly before slicing.
