  • 3 cups flour, all-purpose
  • 1 1/4 cups sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 3 large eggs
  • 3/4 cup orange juice
  • 1/2 cup butter melted
  • 1 cup cranberries
  • 1 cup walnuts chopped, optional

    Preheat oven to 350F (180C).

    Grease and flour 12-cup ring mold or Bundt pan.

    Combine flour, sugar, baking powder, baking soda and salt.

    Make a well in center.

    Add eggs, orange juice and butter to well; stir liquid ingredients just until blended.

    Add cranberries and walnuts if using to well.

    Stir together liquid and dry ingredients just until combined.

    Spread batter in prepared pan.

    Bake in preheated 350F (180C) oven for 45 to 50 minutes.
