Cranberry Cheese Roll

  • 1 (8 ounce) package cream cheese, at room temperature
  • 13 cup craisins, very coarsely chopped (sweetened dried cranberries)
  • 1 cup walnuts or 1 cup pecans, chopped and toasted
  • assorted cracker

    Add the craisins to the cream cheese and mix to combine.

    Hands are the best mixers for this job.

    Place mixture on waxed paper and shape into a roll.

    Roll this in the chopped and toasted nuts.

    Wrap and chill 4 hours or longer.

    To serve: Unwrap roll and place on an attractive platter.

    It is well to do this about 15 minutes before serving to allow the roll to soften slightly.

    Surround with favorite crackers.
