- 1 whole Medium Onion, Sliced
- 1- 1/2 pound Beef Chuck Roast
- 1/4 teaspoons Salt
- 1/4 teaspoons Ground Black Pepper
- 2 cloves Garlic, Minced
- 1 can (16 Oz. Size) Whole Cranberry Sauce
- 2 teaspoons Chipotle Peppers In Adobo Sauce, Finely Chopped
- 2 cups Cooked Brown Rice
- 1 whole Jalapeno Pepper, Halved For Garnish
Directions

1Place onion in a slow cooker.

2Add beef to the cooker.

3Season with salt, pepper and garlic.

4Combine cranberry sauce and chipotle peppers.

5Pour over all.

6Cover and cook over low heat for 6 to 8 hours, or on high heat for 3 to 4 hours.

7Serve with cooked rice and garnish with jalapeno peppers.
