Cranberry Fruit Nut Bread

- 2 c. all-purpose flour
- 1 c. sugar
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. baking soda
- 2 Tbsp. shortening
- 1 Tbsp. grated orange peel
- 3/4 c. orange juice
- 1 well beaten egg
- 1 c. fresh or frozen cranberries, coarsely chopped
- 1/2 c. chopped nuts
Directions

1Preheat oven to 350°.

2In a bowl, mix together flour, sugar, baking powder, salt and baking soda.

3Stir in orange juice and orange peel, shortening and egg to dry ingredients.

4Mix until well blended.

5Stir in cranberries and chopped nuts.

6Turn into a two 9 x 5-inch loaf pans, greased on bottom only.

7Bake for 55 to 60 minutes, until toothpick inserted in center comes out clean. Cool thoroughly before cutting.

8Makes two loaves.
