  • 12 oz. pkg. cranberries
  • 1 c. dates, chopped
  • 1/2 c. oil
  • 12 oz. tangerine juice (frozen orange juice optional)
  • 1 tsp. salt
  • 1 c. oat flour
  • 1 egg
  • 4 Tbsp. grated orange peel
  • 1 c. raisins
  • 1/2 c. hot water
  • 1 c. honey, warmed
  • 2 c. walnuts, chopped
  • 4 c. pastry flour

    Mix first 10 ingredients and let stand 15 minutes.

    Chop cranberries in half.

    Mix well.

    Spoon batter into 24 muffin cups with liners, filling to top.
