Cranberry Muffins

  • 2 cups flour
  • 1/2 cup white sugar
  • 1-1/3 tbsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1/4 cup cooking oil
  • 1/2 cup milk
  • 1 cup fresh
  • frozen cranberries, cut up

Directions

    Measure flour, sugar, baking powder and salt into large bowl.

    stir throughly and make well in center.

    In seperate bowl beat eggs, mix in oil, milk and add berries.

    Pour into well and stir to moisten.

    Batter will be lumpy.

    Fill muffin tins 3/4 full.

    Bake in 400F oven for 20-25 minutes or until brown.

    Cool on wire rack.

    Melt a bit of butter in a bowl and pour a bit of sugar dust the top of the muffins with butter and dip each muffin in the sugar.
