- 2 c. all-purpose flour, sifted
- 1 1/2 tsp. baking powder
- 1/2 tsp. soda
- 1 egg
- 1/4 c. shortening
- 1 tsp. salt
- 1 (1-inch) piece orange rind
- 1 c. sugar
- 3/4 c. orange juice
- 1/2 c. nuts
- 1 c. cranberries
Directions

1Sift flour, baking powder and baking soda into bowl and set aside.

2Put egg, shortening, salt, orange rind, sugar and juice into blender.

3Cover and process until blended.

4Add nuts and cranberries and process only until chopped.

5Empty into flour mixture and mix only until blended.

6Spoon into greased loaf pan. Bake at 350° for about 50 to 60 minutes or until toothpick inserted comes out clean.

7Yield: 1 loaf.
