- 3 c. uncooked rotini (about 8 oz.)
- 3 c. thinly sliced zucchini
- 1 c. shredded carrots
- 1 c. red bell peppers, cut into strips
- 2 cloves garlic, minced
- salt and pepper to taste
- 1/2 c. olive oil
- grated Parmesan
Directions

1Cook rotini as directed on the box, drained.

2Cook zucchini, carrots, red pepper, green pepper and garlic in oil in large skillet until tender.

3Toss rotini and vegetable mixture.

4Serve with cheese, if desired.
