Ingredients

  • 1/2 c. whole wheat flour
  • 1 1/4 c. all-purpose flour
  • 1 c. brown sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. soda
  • 1 tsp. salt
  • 1/4 c. margarine
  • 1 well beaten egg
  • 1/4 c. orange juice
  • 1/2 c. yogurt
  • 1 Tbsp. freshly grated lemon or orange peel
  • 1/2 c. chopped nuts (your choice)
  • 1 or 2 c. fresh cranberries, chopped

Directions

    Mix together whole wheat flour, brown sugar, baking powder, baking soda and salt. Cut the margarine in with a pastry blender. Mix together egg, orange juice, yogurt and lemon peel and add to flour mixture. Fold in cranberries and nuts.

    Bake in greased loaf pans for about 1 hour at 350°.
