Cranberry-Orange Bread

- 2 c. all-purpose flour
- 3/4 c. sugar
- 1 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1/2 tsp. baking soda
- 1/4 c. margarine or butter, softened
- 1 Tbsp. grated orange peel
- 3/4 c. orange juice
- 1 egg
- 1 c. fresh or frozen cranberries, chopped
- 1/2 c. chopped nuts
Directions

1Heat oven to 350°.

2Grease bottom only of a 9 x 5 x 3-inch loaf pan.

3Mix flour, sugar, baking powder, salt and baking soda until mixture is crumbly.

4Stir in orange peel, orange juice and egg, just until moistened.

5Stir in cranberries and nuts.

6Spread in pan.
-
7Bake 55 to 65 minutes or until a wooden pick inserted in center comes out clean.

8Cool 5 minutes.

9Loosen sides of loaf from pan; remove.

10Cool completely before slicing.

11Makes 1 loaf. One slice equals 85 calories and 2 grams of fat.
