Cranberry Wild Rice

  • 1 (6 oz.) pkg. long grain and wild rice
  • 1 c. raw cranberries (fresh or frozen)
  • 1 c. diced celery
  • 1/2 c. chopped cashews
  • 1 tsp. grated orange rind
  • 1/2 c. sugar

Directions

    Cook rice according to package.

    Stir in cranberries.

    Cook until berries begin to pop.

    Add celery, cashews, orange rind and sugar.

    Spoon into 1 1/2-quart casserole.

    Cover tightly and bake at 350° for 30 to 40 minutes.

    Is very good with fowl.
