Crawfish Casserole

Ingredients
- 1 stick margarine
- 1 1/2 c. chopped onion
- 1 bell pepper
- 1/2 tsp. garlic salt
- 2 stalks celery, chopped
- 1 small can Ro-Tel tomatoes
- 1 can cream of mushroom soup
- 2 c. cooked rice
- 1/4 c. chopped parsley
- 2 lb. crawfish tails
- 1 can or pkg. whole kernel corn, drained
- bread crumbs
- seasoning to taste
Directions

1Saute onion, pepper and celery in margarine.

2Add crawfish and Ro-Tel tomatoes.

3Cook 5 minutes. Add soup and corn and cook 5 minutes longer.

4Add 2 cups cooked rice (a little more may be added if desired) and parsley.

5If you like seafood hot or spicy, add more seasoning to taste.

6Put into greased casserole; cover with bread crumbs and bake 1/2 hour at 350° or until center begins to bubble.
