Crawfish Casserole

- 1 lb. crawfish tails
- 1 pkg. yellow saffron rice
- 1 (10 3/4 oz.) can cream of mushroom soup
- 1 can Ro-Tel tomatoes
- 1 bell pepper, chopped
- 1 onion, chopped
- 1/2 c. margarine
- American cheese slices (to top)
Directions

1Cook rice according to package.

2Saute pepper and onion in butter until soft.

3Puree tomatoes in blender and add to pepper and onion.

4Add crawfish and simmer for 10 minutes.

5Add soup and rice.

6Put mixture in a buttered casserole dish and top with slices of cheese.

7Bake in a 350° oven for approximately 45 minutes.
