- 3 eggs
- 1 block melted butter
- 1 cup chopped shallots
- 1 chopped onion
- 1 can Rotel tomatoes, diced and drained
- 1 lb. crawfish tails
- 1 cup colby cheese, grated
Directions

1Mix all ingredients well and pour into a greased 9x13 pan. Bake at 350 degrees for 45 to 50 minutes.
