  • 1 pkg. cornbread mix (such as Jiffy, Martha White, etc.)
  • 3/4 c. yellow cornmeal
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 3 eggs
  • 1/2 c. oil
  • 1 (15 oz.) can corn (cream-style or whole kernel)
  • 1/4 to 1/2 c. jalapeno peppers
  • 1 lb. crawfish
  • 1 c. grated Cheddar cheese
  • 1 medium onion, chopped

Directions
