Crawfish Dip

  • 1 c. diced green bell pepper
  • 1 c. diced red bell pepper
  • 1 tbsp. butter
  • 2 cans Rotel tomatoes, drained
  • 2 -3 Tbsp. cajun seasonings
  • 1 bunch parsley, finely chopped
  • 2 lb. crawfish tails, chopped medium
  • 24 oz. cream cheese

Directions

    Saute peppers in butter, then add seasonings, parsley, Rotel tomatoes and crawfish.

    Add a few chunks of cream cheese at a time, constantly stirring.

    When the cheese is melted, it's ready! If this is too thick, you can cut it with whipping cream or half and half.
