  • 4 medium onions, chopped
  • 2 stalks celery, sliced
  • 2 cloves garlic, crushed
  • 2 medium bell peppers, chopped
  • parsley
  • salt and pepper
  • 1/4 c. cooking oil
  • crawfish fat
  • 1 c. or more hot water
