  • 1 1/2 lb. cooked crawfish meat
  • 4 Tbsp. butter
  • 2 c. chopped onion
  • 1 c. scallions
  • 1/2 c. chopped celery
  • 1/2 c. chopped bell pepper
  • 3 cloves minced garlic
  • 1/4 c. flour
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. salt
  • 1/4 tsp. white pepper
  • 1 (9-inch) pie crust

    Melt butter in a large skillet.

    Saute vegetables over medium heat until soft.

    Add flour and spices.

    Stir well.

    Remove from heat and add crawfish.

    Pour into pie shell and bake at 350° for 15 to 20 minutes. May substitute shrimp for crawfish.
