- 1 1/2 lb. cooked crawfish meat
- 4 Tbsp. butter
- 2 c. chopped onion
- 1 c. scallions
- 1/2 c. chopped celery
- 1/2 c. chopped bell pepper
- 3 cloves minced garlic
- 1/4 c. flour
- 1/2 tsp. cayenne pepper
- 1/2 tsp. salt
- 1/4 tsp. white pepper
- 1 (9-inch) pie crust
Directions

1Melt butter in a large skillet.

2Saute vegetables over medium heat until soft.

3Add flour and spices.

4Stir well.

5Remove from heat and add crawfish.

6Pour into pie shell and bake at 350° for 15 to 20 minutes. May substitute shrimp for crawfish.

7Serves 6.
