Crawfish Pie

Ingredients

  • 1 lb. crawfish tails
  • 1 bunch green onions, chopped fine
  • 1/2 c. parsley
  • 1/4 c. flour
  • 1 stick oleo or butter (best with real butter)
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • salt and pepper to taste (after all is mixed and cooked for a few minutes)

    Melt butter.

    Saute onions and parsley in butter. Add flour and blend well.

    Add soup as in the can.

    Add no water to it. Simmer 5 minutes. Add crawfish tails (drained). Simmer 10 more minutes on very low heat.

    Prebake small pie shells at 350° for about 10 minutes or until lightly browned.

    Fill with crawfish filling.

    Bake filled shells for 10 minutes.
