Crawfish Stew

Ingredients

  • 1 lb. peeled crawfish
  • 1 stick oleo
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 1 whole garlic, peeled and chopped
  • 1 Tbsp. paprika
  • 2 Tbsp. flour
  • 1 c. chopped parsley
  • 2 bunches green onions, chopped
  • 2 c. water
  • salt and pepper to taste

Directions

    Melt oleo in iron skillet.

    Add onion, bell pepper, garlic, parsley and green onions.

    Saute well for 10 minutes.

    Stir in flour and paprika.

    Add crawfish.

    Add water.

    Stir and simmer for 20 to 25 minutes.

    Serve over cooked rice.
