- 1 lb. peeled crawfish
- 1 stick oleo
- 1 medium onion, chopped
- 1 medium bell pepper, chopped
- 1 whole garlic, peeled and chopped
- 1 Tbsp. paprika
- 2 Tbsp. flour
- 1 c. chopped parsley
- 2 bunches green onions, chopped
- 2 c. water
- salt and pepper to taste
Directions

1Melt oleo in iron skillet.

2Add onion, bell pepper, garlic, parsley and green onions.

3Saute well for 10 minutes.

4Stir in flour and paprika.

5Add crawfish.

6Add water.

7Stir and simmer for 20 to 25 minutes.

8Serve over cooked rice.
