Cream Cheese Fruit Cupcakes

  • 4 eggs
  • 1 c. sugar
  • 3 large pkg. cream cheese
  • vanilla wafers
  • about 29 oz. pie filling (blueberry, cherry, pineapple or personal favorite)

Directions

    Beat eggs, sugar and cream cheese together until smooth. Place cupcake liners in cupcake tray and place 1 wafer in bottom of each, flat side down.

    Tablespoon mixture over wafer to half full.

    Bake at 350° for 18 minutes.

    Cool and top with pie filling.

    Makes about 32 cupcakes.
