- 1 c. water
- 1/2 c. butter
- 1 c. sifted flour
- 4 eggs
Directions

1Heat to boiling point in saucepan the water and butter.

2Lower heat to simmering.

3Stir in flour until mixture leaves the pan and forms into a ball (about 1 minute).

4Remove from heat and then cool about 1 hour.

5Beat in eggs, one at a time, until velvety smooth.

6Heat oven to 400°.

7Drop by teaspoonful onto ungreased baking sheet.

8Bake until dry and light brown, 45 to 50 minutes. Cool on rack or on aluminum foil with paper underneath.

9Store in covered container or freeze.

10Cut through middle; fill with pudding as a dessert or meat salad as a finger sandwich.

11Makes about 8 large or 12 medium puffs.
