- 1 c. water
- 1 stick butter
- 1 c. flour
- 4 eggs
Directions

1Measure water into medium saucepan.

2Cut butter into pieces and add to water.

3Heat until butter melts and water boils.

4Add flour all at once.

5Stir quickly until mixture forms a ball and leaves the sides of the pan.

6Be sure not to overcook.

7The mixture should not look greasy.

8Remove from heat.

9Beat in eggs one at a time. Beat well after each egg.

10Shape puffs onto cookie sheet.

11Bake at 450° for 15 minutes.

12Lower heat to 350° and continue to bake for 25 minutes.

13Prick with knife and let stand in oven for 5 more minutes.

14Makes 16 medium puffs.

15Large puffs (8) should cook a total of 50 minutes.

16Small puffs (3 dozen) bake 20 minutes total.
