Cream Rice Pudding Recipe

  • 1/2 c. uncooked regular rice
  • 1 quart. lowfat milk
  • 1/2 teaspoon salt
  • 1/2 c. sugar
  • 2 Large eggs
  • 1 1/2 teaspoon vanilla

Directions

    Pour boiling water over rice.

    Let stand for not less than five min.

    Heat lowfat milk to near boiling.

    Drain rice well.

    Add in to warm lowfat milk.

    Simmer for 25 min.

    Stir occasionally.

    Remove from heat and add in salt, sugar, Large eggs (that have been beaten well) and vanilla.

    Mix slightly till thickened.

    Pour into bowl.

    Cold.

    Sprinkle with nutmeg.
