- 1/2 c. uncooked regular rice
- 1 quart. lowfat milk
- 1/2 teaspoon salt
- 1/2 c. sugar
- 2 Large eggs
- 1 1/2 teaspoon vanilla
Directions

1Pour boiling water over rice.

2Let stand for not less than five min.

3Heat lowfat milk to near boiling.

4Drain rice well.

5Add in to warm lowfat milk.

6Simmer for 25 min.

7Stir occasionally.

8Remove from heat and add in salt, sugar, Large eggs (that have been beaten well) and vanilla.

9Mix slightly till thickened.

10Pour into bowl.

11Cold.
-
12Sprinkle with nutmeg.
