- 1 (15 oz.) can cream-style corn
- 1 c. skim milk
- 1 egg, beaten
- 1 c. cracker crumbs, divided
- 2 oz. jar chopped pimento
- 1/4 c. chopped onion
- 1/4 tsp. pepper
- 1 tsp. oleo, melted
- vegetable cooking spray
Directions

1Preheat oven to 350°.

2In medium bowl combine corn and milk. Stir in egg.

3Add 3/4 cup cracker crumbs, pimento, onion and pepper.

4Mix thoroughly.

5Pour mixture into 1-quart dish coated with vegetable spray.

6Combine oleo with 1/4 cup crumbs.

7Stir until crumbs are moistened.

8Spread crumbs over corn mixture. Bake 45 to 50 minutes.
