- 1 c. all-purpose flour
- 1 c. yellow cornmeal
- 2 Tbsp. granulated sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 2 Tbsp. margarine, cut in pieces
- 2/3 c. buttermilk
- 1 egg
- 1 (8 1/4 oz.) can cream-style corn
Directions

1Heat oven to 425°.

2Grease 12 (2 1/2-inch) muffin cups.

3Mix flour, cornmeal, sugar, baking powder, salt and baking soda.

4Cut in margarine with pastry blender.

5In a large measuring cup, mix buttermilk, egg and corn.

6Stir into flour mixture just until moist.

7Spoon into muffin cups.

8Bake 20 to 25 minutes or until golden.

9Allow to cool on rack for 5 minutes before removing from pans.
